The first odds are calculated on possibility. After that it fluctuates because of money placed on said bet. Any events after that, say a player says he'd love to play for us would also change the odds.

Bookies don't always get it right, they make more money than they lose because the odds are in their favour, just like a casino. If they've the possible outcomes they will subsidise losses from gains on people who lost the bet.
