Well when sniping on BC2, I've become used to the degree of bullet drop so can aim just above someone's head and hit them with headshots, regardless of the distance. This means that I can choose a rifle such as the GOL which doesn't rate very highly for damage but it extremely accurate. A headshot kills regardless of the rifle or rounds used.
On Vietnam, I'm really struggling and I think there's a greater degree of bullet drop, perhaps due to the more dated weapons used. A shot to the body doesn't kill someone who's health is still full so they tend to start running! Maybe when I've earned better rifles it will become easier.
I don't snipe all the time by the way, it depends on the map and I will often change classes mid-map or even by stealing weapons from a dead body,

I was on BC2 today on the map Panama Canal which is one of the better ones, very detailed with loads of rubble and broken, multi-story buildings. I started as 'Assault' to claim a couple of bases then after getting blown to bits by a tank, switched to 'Recon' carrying my favourite GOL rifle. Most people fall for the temptation of standing on rooftops to snipe but you're easier to see there and people look out for you. I went up onto the tree-lined bank that runs along the side of the map and just scanned the area, tagging enemies for the rest of the squad, calling in mortar strikes on passing tanks and popping people's heads. Racked up loads of points
