But if you "invest" in defence then surely you can't afford "the likes of Kane, Sanchez, Alli, Coutinho, Jesus [the big points scorers]" in your team and you'll fall way behind anyhow?

You don't fall way behind if you invest the difference in money wisely (which is of course more easily said than done). Kane and Sanchez together cost 24.5m and had 488 points together last season (that's absolutely massive of course). Coutinho, Sigurdsson and Zaha all together cost 24.5m million too, but had a collective 501 points. So I would have none of the highest points scorers from last season in my team, but I'd still have more points and more importantly, more options to pick from depending on the gameweeks and the fixtures.
Same goes for defence, you can have Kane (224) and Francis (89) for 17m or you can have Hazard (224) and Walker (142). People are blinded by some of the big point hauls the big hitters get on some gameweeks. Top defenders in attacking sides with a solid defence get a very steady amount of points, it looks a lot less spectacular, but worth it long term in my opinion. It does give you a lot more options too to change formations. If you're constantly stuck with a 3 man defence of budget defenders, there's not much you can do. Of course you need a big hitter to captain, but you can only captain one every gameweek anyway.
You probably already knew exactly what I was trying to say, thought I'd just show why I (on some occasions) prefer investing in defence rather than just try to fit all the big hitters in my team. Now watch me completely fail this season, haha
